体外模拟鳞杯伞子实体碱溶性多糖的消化与酵解特性Digestion and fermentation characteristics of alkaloid polysaccharide from Clitocybe squamulosa fruiting body in vitro

摘要(Abstract):
以热水浸提后的鳞杯伞Clitocybe squamulosa子实体残渣为原料,进行二次利用,浸提碱溶性多糖。通过模拟体外消化与厌氧发酵实验,探究鳞杯伞子实体碱溶性多糖的消化特性以及对肠道内短链脂肪酸含量的影响。结果表明:体外模拟唾液和胃肠液消化后,多糖的官能团结构特征没有发生显著性改变,但碱溶性多糖的块状结构解体,碎片化形态出现,分子量降低[从(14.04±0.21) kDa到(10.48±0.26) kDa],还原糖含量升高[从(0.06±0.01) mmol/L到(0.92±0.01) mmol/L]。在体外厌氧发酵条件下,发酵液中的OD600显著性增加(P<0.05),而总糖含量和pH显著性降低(P<0.05);短链脂肪酸(SCFAs)总量从(1.40±0.06) mmol/L升高至(7.90±0.16) mmol/L。表明鳞杯伞碱溶性多糖可以被人体肠道菌群有效吸收利用,可以作为促进肠道健康的功能性食品进行研发。
